Sour Sweet Chutney (Khati Mithi Chutney) Recipe
INGREDIENTS :
1 lb. green Mangoes
8 oz. fresh root Ginger
1 oz. Almonds
12 Dates
¼ oz. pepperCorns, freshly ground
2 Teaspoons ground cummin seed
½ Teaspoon ground Cinnamon
1 Teaspoon crushed Cardamom seeds 6 Cloves
1 dessertspoon Chilli powder
4 oz. Salt
4 oz. Raisins
1 pint (U.S. 24 cups) Vinegar
1 lb. Sugar
How To Cook Sour Sweet Chutney (Khati Mithi Chutney) :
Peel and slice the mangoes, put in a bowl, and set aside. Slice ginger finely, blanch and halve almonds, Slice dates thinly and soak in water for 15 minutes. Put all the dry spices, salt, raisins, almonds and dates in a bowl and mix. Put vinegar and sugar in a saucepan, stir until sugar is dissolved, bring almost to boiling point before adding the spice mixture, mangoes and ginger. Cook and stir till mangoes are tender. Remove from heat, cool and bottle.
